Rice has always been a part of our staple diet. We are so used to the texture and taste, we forget about the nutritional values. White rice, famous among the others is used by almost every household and is consumed minimum twice a day. However, we need to balance our diet by adding the gluten-free superfood, Quinoa. This salad is ought to give your palate the right taste and your body the right nutrients.

With some red quinoa in your salad, you could add some colour to your meal. Pop in some fresh fruits like banana, watermelon pineapple, etc with a drizzle of maple syrup to add some sweetness & garnish to your quinoa salad bowl. Toss in some bananas & Rostaa Blueberries to the salad to feel healthy and nourished throughout the day. Feel refreshed by adding greens like 2-3 ice cabbage leaves on the side while serving the salad.
1) Rinse and drain the quinoa
2) Place water, almond milk, and quinoa into a saucepan and bring to a boil. Reduce to a simmer, add cinnamon, vanilla and sea salt. Cover and cook for about 15 minutes, or until all liquid is absorbed
3) Watch the pot carefully because it has a tendency to want to boil over. Remove from heat and let pot sit, covered for 2-3 minutes
4) Remove lid and fluff quinoa before portioning into two bowls. Top with cacao nibs, fresh fruit and a drizzle of maple syrup. You can also add additional milk if you want more moisture
